I always keep 2 boxes of frozen puff pastry in the freezer (each box contains 2 sheets). Why? Because you can create anything from breakfast sweet rolls to spanakopita. Let it thaw overnight in the fridge and it will be perfect to use the next day. The thing about puff pastry is not to let it get too warm and don’t touch it more than necessary.
Here is an easy appetizer that you can put almost anything in. you can make it sweet or savory, nutty or cheesy. It’s what you feel like eating.
You will need:
- 2 puff pastry sheets
- Flour for dusting
- 1 egg beaten for egg wash
- Melted butter
- Stuffing – I used prosciutto and parmesan cheese, but you could use cheddar and ham or feta and spinach. Sweet stuffing - use nuts, raisins, cinnamon and butter, or chocolate with nuts or dried fruit.
Roll out the first puff sheet with a little flour and a rolling pin. Just an inch or two is all you need to increase its size. Brush with a little melted butter. Put your ingredients on the pastry leaving ½ inch on the far end. Start rolling up your pastry and when you get to the end, brush a little egg wash on the end so it sticks. Cut into ½ inch slices and place on a cookie sheet lined with parchment paper. You can refrigerate at this point if you’re not ready to bake them. Bake in a preheated oven at 425° for about 20-25 minutes or until golden brown and puffy. Let cool or serve warm. I served my prosciutto and cheese pin wheels with marinara sauce.
